Campfire S'mores

A golden, gooey marshmallow, a square of chocolate going soft in the heat and two graham crackers to hold it all together. We named the whole site after this one, so we take it seriously.

15 minMakes 6 s'mores

The Story

The first printed recipe for this campfire treat turned up in a Girl Scouts guidebook in 1927, under the name Some More. The name says it all: nobody has ever stopped at one. Over the years it got squished into s'mores, and it has been the official dessert of camping trips across North America ever since.

There are two schools of toasting. The patient camp turns the marshmallow slowly over glowing coals until it is evenly golden all the way through. The bold camp sets it on fire, blows it out and enjoys the crackly, charred shell. Both are correct.

Ingredients

  • 6 full graham cracker sheets, broken in half into squares
  • 6 large marshmallows, plus a few spares for the ones that fall in the fire
  • 2 milk chocolate bars (1.55 oz, 43 g each), broken into rectangles
  • Long roasting sticks or metal skewers
  • A campfire burned down to glowing coals

Steps

  1. Let the fire burn down until you have a bed of glowing coals. Big flames scorch the outside and leave the middle cold.
  2. Set out 6 graham cracker squares and top each one with 4 small rectangles of chocolate, a third of a bar. Keep the other 6 squares ready for the tops.
  3. Push a marshmallow onto the end of a roasting stick.
  4. Hold it about 4 inches (10 cm) above the coals and turn it slowly for 1 to 2 minutes, until it is golden all over and puffed. If it catches fire, blow it out and call it a style choice.
  5. Set the hot marshmallow on the chocolate, press a second cracker on top and squeeze gently while you slide out the stick.
  6. Wait about 30 seconds so the chocolate starts to melt, then eat it, and make some more.

FAQs

Can I make s'mores without a campfire?

Yes. Lay the crackers and chocolate on a baking sheet, top each with a marshmallow and broil on high for 1 to 2 minutes, watching closely, until the marshmallows are golden. Add the top crackers and press.

What chocolate is best for s'mores?

Thin milk chocolate melts fastest, which is why it is the classic. Dark chocolate, peanut butter cups or a chocolate cookie in place of a cracker are all well worth a try.
